With the “Register Interest (Mentor managed)” setting turned on:
When creating a booking (“Bespoke invoice”) it is only possible to select dates from one block at a time.
However, on completing (“Send invoice” button), the system deletes the attendee name from ALL blocks where interest has been registered.
Either the system should only delete the attendee from the block where the booking has been created, or (preferably in my opinion) it should be possible to select dates from multiple blocks on one invoice.
I’m using the Edge browser.
It’s particularly annoying having to create multiple bookings for the same person, because I have to answer the long list of Council-provided questions every time.
I’ve now discovered if a booker has more than one child (in my case, different children in different blocks) it deletes ALL registered interest for ALL their children in ALL session blocks!
This is a hard to deal with if the person booking is from e.g. a Children’s Home where there are different surnames for all the children they’ve registered interest.

I’m happy to confirm that when you create a booking, you can now prepopulate answers from your customer’s previous booking.
I hope this resolves this issue.

Regarding your second concern, we have adjusted our logic as per your suggestion. Now we will only remove the interested party from the session that you have created a booking for. If the customer has registered interest for other dates - they will remain on the list for these dates.
